Carrillada en salsa

Delicious family recipe from Marilo: iberian pork cheeks in red wine sauce ☺️.

Ingredients

  • 4 pork or beef cheeks (~500gr)
  • 200 g of onion
  • 100 g of carrot
  • 400 ml of red wine
  • 400 ml of water
  • 1 bundle of herbs (bay leaf
  • thyme
  • oregano)
  • 1 beef stock cube
  • 2 tablespoons of flour for coating
  • A splash of olive oil
  • 1 pinch of salt
  • 1 pinch of ground black pepper
  • Garlic

Directions

  1. Season the cheeks with salt and pepper and coat them in flour.
  2. Chop the vegetables into pieces and set aside. Make a cut in the garlic and leave the skin on.
  3. Sear the cheeks in a pan with hot olive oil. Once done, take out and set aside.
  4. Add all the chopped vegetables and the whole garlic cloves to the pan.
  5. Once the vegetables are sautéed, pour in the red wine.
  6. When the alcohol evaporates a little, add the cheeks.
  7. At this point, add the aromatic herbs and the crumbled stock cube to enhance the flavor of the sauce.
  8. Pour in the water and let the cheeks cook on low heat.
  9. Once the meat is tender, remove the garlic and the herbs.
  10. Blend the sauce and strain it for a smoother consistency.
  11. Put the blended sauce back into the pan or pot with the cheeks, mix everything, and let cook for 5 more minutes.
