Carrillada en salsa

Delicious family recipe from Marilo: iberian pork cheeks in red wine sauce ☺️.
Ingredients

- 4 pork or beef cheeks (~500gr)
- 200 g of onion
- 100 g of carrot
- 400 ml of red wine
- 400 ml of water
- 1 bundle of herbs (bay leaf
- thyme
- oregano)
- 1 beef stock cube
- 2 tablespoons of flour for coating
- A splash of olive oil
- 1 pinch of salt
- 1 pinch of ground black pepper
- Garlic
Directions

- Season the cheeks with salt and pepper and coat them in flour.
- Chop the vegetables into pieces and set aside. Make a cut in the garlic and leave the skin on.
- Sear the cheeks in a pan with hot olive oil. Once done, take out and set aside.
- Add all the chopped vegetables and the whole garlic cloves to the pan.
- Once the vegetables are sautéed, pour in the red wine.
- When the alcohol evaporates a little, add the cheeks.
- At this point, add the aromatic herbs and the crumbled stock cube to enhance the flavor of the sauce.
- Pour in the water and let the cheeks cook on low heat.
- Once the meat is tender, remove the garlic and the herbs.
- Blend the sauce and strain it for a smoother consistency.
- Put the blended sauce back into the pan or pot with the cheeks, mix everything, and let cook for 5 more minutes.
