Vietnamese Bun Cha

This is an extract of a great traditional Vietnamese recipe: Bun Cha.
Ingredients
β yield β 2
- 300g minced π·
- 1-2 shallot onions
- oyster sauce
- fish sauce
- rice vinegar
- 1 x lemongrass
- garlic
- white pepper
- salt
- sugar
- MSG seasoning
- rice noodles or vermicelli
- honey π―
- 1 carrot
- papaya
- chilis πΆοΈ
Directions
β β β 1 hour
π₯ Side veggies, marinated
- Slice carrot and papaya into chopstick-friendly pieces, put in a bowl
- Add few tablespoons of rice vinegar, salt, teaspoon of sugar
- Let it marinate for a bit
OMG must be delicious π
π₯ Meatballs
- Slice the shallots into tiny cubes
- Mince garlic
- Slice lemongrass into tiny cubes
- Add a tablespoon or more of fish sauce
- Add a tablespoon or more of oyster sauce
- Add salt, pepper and MSG seasoning
- Add honey
- Mix with the minced pork and set aside for 30m
- Shape into meatballs
- Cook on a pan with plenty of vegetable oil on each side until done
π Noodles
- Just rice noodles oiled, follow instructions from the packaging
- Rinse in cold water
- When serving, add some mint and salad
π₯« Dipping Sauce
- In a wok/sauce pot add a few tablespoons of fish sauce
- Tablespoon of water
- Teaspoon of sugar
- Tablespoon or more of rice vinegar
- Sliced chilis or chili flakes
- Black pepper
- Cook on low fire for a few minutes until aromatic
- Scoop in a small container to serve
- (Optional) Add a tablespoon of lime juice for more intense flavor
